The cookie recipe is super easy, limited ingredients, and delicious!
Ingredients:
- 1.25 cups creamy peanut butter
- 1.5 cups of old fashioned oats
- 1 cup of unsweetened applesauce (I used the recipe above and made my own)
- 3 cups of whole wheat flour (you can also use garbanzo bean flour if there's a wheat allergy. I used 1 cup of this flour & 2 of the wheat flour)
- 1 tsp baking powder
Preheat oven to 350 degrees.
Mix all of the ingredients together in a large bowl. Not everything will come together well since there’s no egg for binding, so add more applesauce or peanut butter if necessary.
I chose to roll these into teaspoon sized balls and flatten on the buttered cookie sheet, but you can roll out and use a cookie cutter if you wish.
Bake in the oven for 20-25 minutes or until browned slightly. Let cool completely and store in an airtight container or plastic bag.
