This recipe has all ingredients in one roasting pan.
Ingredients:
1 butternut squash
3 peeled medium sized russet potatoes
2 lbs of stew beef
3/4 cup of spinach (or any other veggie you'd prefer)
1 tbs coconut oil (or your preferred cooking oil)
1 tsp of cinnamon (optional)
1 tsp fresh parsley (optional)
Preheat oven to 375 degrees. Cut the squash in half, and clean out the seeds (you can clean these and roast them as treats for your dog). Cut the butternut squash, the peeled potatoes, and the 2 pounds of beef all into 1-inch cubes. Cut smaller cubes for smaller dogs. You can leave the skin on the squash because it will get soft in the oven, but skin the potatoes.
I tossed the squash and potatoes in a tablespoon of coconut oil to prevent burning. I also added the cinnamon and parsley to this mixture, but you don't have to. Place the potatoes and squash in a roasting pan or baking dish. Place in the oven, and set the timer for 35 minutes.
Then place the beef in a second dish, and add the spinach or another green veggie of your choice. When the timer goes off, remove the squash and potatoes from the oven, stir them up, then return them to the oven along with the beef and spinach. Set the timer for 30 minutes.
The meat will be done when it's brown on the outside and little to no pink remains inside. The squash and potatoes are done when a fork slides in easily. You may have to continuously check the density of the potatoes and squash.
After the 30 minutes, I removed the pan and took the beef out. I put it in the food processor and chopped it finely and put it aside. I put the potatoes and squash back in the oven for another 20 minutes because I didn't feel it was 'mashable.' I felt the potato/squash combo was done after almost an hour. Once the potatoes and squash were soft enough, I mashed them in the pan with the juices and spinach. As always, I mixed in my calcium and vitamin supplement into the potato mixture. I mixed 3 cups meat and 2 cups mixture in a bowl and repeated this until all ingredients were combined. This recipe is pretty dense and I think I'll get at about 5 days worth of meals (feeding two dogs a cup a day).
Note: I chose to chop the meat in the food processor and mash the potatoes/squash, you can leave it in the cube form if you wish.
Note: Ratio for portions should be about one-half meat, one-quarter veggie and one-quarter potato.
